2 tb Olive oil
1 Garlic clove minced
1 Can Italian Tomatoes 28oz
1 Can Tomato Paste 6 oz
1 Salt to taste
1/2 ts Dried Oregano
1 Whole Bay Leaf
1 c Chopped onion
1 lb Ground meat
1 Can Tomato sauce 15 oz
2 tb Chopped Italian parsley
1 ts Dried Basil
1/4 ts Black pepper
Heat oil in a large heavy saucepan add onion saute over low heat, stirring, until tender and golden, about 5 min. Add the garlic saute 1 min. Meanwhile, brown the ground meat in a skillet, stirring to crumble meat drain off fat add to the onion mi ture. Add the tomatoes, tomato sauce, 1 tomato sauce can filled with water, the tomato paste, parsley, 1 tsp salt, the basil, oregano, pepper, and bay leaf. Heat over medium low heat to simmering. Simmer, uncovered, over low heat, stirring occasionally until sauce is thickened and flavorful, about 1 hour and 15 minutes.
