2 lb Fresh or frozen halibut
thawed 3/4 c Thinly sliced onion
1 cn 4 oz. sliced mushrooms,
drained, or 1 c fresh slice mushrooms 3/4 c Chopped fresh or canned
tomatoes 1/4 c Chopped green pepper
3 T Finely chopped pimento
1/2 c Dry white wine
2 T White vinegar
1 t Salt
1/8 t Fresh ground pepper
2 T Light margarine
1/4 c Minced parsley
Lemon wedges to garnish 1. Preheat oven to 350F. Prepare large baking dish with nonstick
spray. Cut fish into 6 even servings. Arrange onion in bottom of baking pan. 2. Place fish ontop of onion. Combine the remaining ingredients e cept
margarine and lemon wedges. Spread ontop of fish. Dot with margarine. 3. Bake 25 30 minutes or until fish flakes easily with fork. Serve
with lemon wedges. 1 serving 4 oz cooked fish.
Food e changes per serving: 4 proteins, 1 vegetable, 1 fat

4 c Pepperidge Farm herb season ed cubed stuffing 6 Skinless boneless chicken .halves Paprika 1 cn Campbell's cream of mushroom .soup 1/3 c Milk 1 tb Chopped fresh parsley 1. Mi stuffing, 1/2 cup boiling water and 1 T margarine. 2. Spoon stuffing across the center of a 3 quart shallow baking dish. Place chicken on each side of the stuffing. Sprinkle chicken with paprika. 3. Mi soup, milk and parsley. Pour over chicken. 4. Bake covered at 400F for 15 minutes. 5. Bake uncovered 15 minutes more or until chicken is no longer pink. ...
