2 tb Vegetable oil
1 md Onion, chopped
1 Green pepper, chopped fine
1 lg Garlic clove, chopped fine
2 tb Finely chopped parsley
1 tb Lemon juice
1/2 ts Salt
1 tb Chopped fresh oregano OR
1 ts Dried oregano
1 tb Chopped fresh basil OR
1 ts Dried basil
1/2 ts Tabasco sauce
2 md Tomatoes, seeded and chopped
Coarse 2 To 3 pears, peeled and amp chopped
Heat oil in medium frypan. Saute onion until tender, about 3 to 4 minutes. Add green pepper, garlic, parsley, lemon juice, salt, oregano, basil and Tobasco sauce cook 2 minutes. 2 cups self rising flour 1/4 cup shortening (or margarine) 1/2 cup milk or buttermilk, (up to 3/4) Preheat oven to 500F. Place flour in a medium bowl. Add shortening and using pastry blender or two knives, cut in until consistency of coarse crumbs. With a fork, blend in just enough milk until dough leaves sides of bowl. Turn out onto lightly floured surface and knead 10 to 12 strokes. Roll dough out 1/2 inch thick. Shape with 2 inch cutter.
