2 1/2 cups self rising flour
1 teaspoon cinnamon
2 eggs
1 1/4 cups sugar
3/4 cup plus 2 tsp. oil
2 1/2 cups grated zucchini
2 teaspoons vanilla
1 teaspoon nutmeg optional

(if using all purpose flour, add 1 tsp. salt, 1 tsp. baking powder, and amp 1 tsp. b aking soda)
Mi flour with cinnamon (and nutmeg). Mi in sugr. Add wet ingredients (eggs, o il, vanilla, zucs) and mi till just combined. Spoon into prepared muffin pans. Bake at 350 F for 15 minutes or until done. Make 24 muffins. Note: Freeze up g rated zucchini to use in this recipe.
