5 sm Eggplants, sliced
Salt 2 tb Olive oil
1/4 ts Black pepper
1/2 ts Sweet red pepper
1 ts Vinegar OR lemon juice
1/2 ts Garlic, chopped
1 tb Italian parsley, chopped
2 lg Tomatoes, skinned and amp grated
Lemon quarters Salt eggplant slices generously and amp leave to drain for 30 minutes. Rinse well under running water and amp pat dry on paper towels. Saute eggplants in oil until just golden. Add salt to taste, along with the peppers and amp the rest of the ingredients e cept the lemon quarters. Cook and amp mash gently for 10 to 12 minutes, or until e cess liquids have evaporated. Adjust seasoning. Allow to cool and amp then serve garnished with lemon quarters.

2 lb Chicken, boned 1/2 c Bread crumbs 1 t Salt 1/8 t Pepper 2 ea Eggs, beaten 1/2 c Parmesan cheese 1 t Oregano 1 c White wine 3/4 c Salad oil Pound chicken till thin. Pat dry and cut into pieces. Combine bread crumbs, parmesan cheese, spices and salt. Set aside. Beat eggs in a shallow dish. Dip chicken into egg, then into the crumb mi ture, coating both sides. Heat oil in skillet. Saute' chicken until brown about 3 minutes each side. Remove to a warm platter. Drain fat, Stir in wine scraping up brown residue until boil. Pour over chicken. ...
